Happy New Year!
Boy, I have been so busy since the New Year! Between work and countless hours of studying for boards (slightly freaking out!), I have hardly had any time to focus on anything else! Plus I have been doing so many practice questions that I needed a good excuse to take a break, lol!
One of my New Year’s goals is that I am going to make it a point to really try to blog on a regular basis this year. So far, I am aiming for MWF blog posts, so we will see how that goes!
Anyway, I was in charge of making a dessert this year. I made a delicious no bake chocolate tart for Christmas this year and I am so excited to share the recipe! This tart is 100% vegan, paleo and gluten free which is a total plus knowing that it tastes so amazing and is really not that bad for you also! I got the recipe from LeelaLicious. I really like her blog posts because all of her recipes are pretty health conscious and made with great ingredients!
No Bake Chocolate Tart:
For the crust:
1/2 cup pitted Medjool dates
1 cup almonds (I used half almonds, half walnuts)
1 bar of Enjoy Life Dark Chocolate
1 T coconut oil, melted
Pinch of salt
For the filling:
1 cup coconut cream
3 bars Enjoy Life Dark Chocolate
1/4 cup coconut oil, melted
1/2 cup pitted Medjool dates
1 t vanilla extract
Garnish as you please; I used fresh berries, sliced almonds, fresh mint and sea salt
- Pulse dates and almonds (or nuts) in a food processor until finely blended. (I used my NinjaBullet and it worked just fine!) Add melted chocolate, coconut oil and salt. Press crust into a 9 in. tart pan and chill until set.
2. Heat coconut cream, chocolate and coconut oil until melted. Add into cleaned food processor along with dates and vanilla extract. Pulse everything until combined and smooth.
3. Transfer filling into chilled, hardened crust. Place tart back into refrigerator to set. This took me about 2 hours.
4. Garnish and top tart with any toppings you would like! Place tart back in refrigerator until ready to serve.
I found most of these ingredients at my local Sprouts. The coconut cream and the Medjool dates were the hardest to find, they were not at my Target so I opted for a natural food store to get the ingredients! I also went to *5* different stores looking for the perfect tart pan. Who knew that would be such a hard thing to find?! I finally found this tart pan at JoAnn Fabrics, of all places! It worked really well and the removable base was really nice when it came time to serve the dessert!
This tart ended up being such a hit this Christmas because my mom and my grandma are lactose intolerant (like really bad!) so they never get to eat things like this. When I found that this one was completely vegan, I knew I had to make it because that meant they could eat it! It ended up being a super easy and super delicious dessert to add to the dessert table this year. I think that this tart would be a really good dessert for any occasion though, not just the holidays.
